Chicken and Rice
Put 1/2 cup brown rice and I cup water, 1/4 tsp. salt, 3 tbsp chopped
parsley and I tbsp coconut oil in bottom of skillet.

Bring to a boil. Lay chicken on top of rice (thighs or other), salt, and
cover tightly. Simmer one hour until rice is absorbed and chicken is tender.
