Beef and Potato Skillet Casserole
1-2 lbs of ground beef or leftover shredded/chopped roast
6 medium potatoes or 1 bag of southern style hash browns
2-3 zucchinis
1 1/2 cups shredded mozzarella
Parmesan cheese
Garlic Salt
Dried Parsley
Brown green beef.  Peel and chop potatoes into bite sized pieces.  Place in a microwave safe bowl, cover with water, and cook for 10 minutes.  Slice Zucchini into small, thin pieces.  Lightly grease skillet with bacon grease, butter, or a little olive oil and brown potatoes and zucchini.  Add beef and sprinkle parmesan cheese, garlic salt and parsley to taste.  Top with cheese and serve.
