**Made with Gluten-Free Bake Mix**
1/2 cup Cottage Cheese
1/3 cup Gluten-Free Bake
1 tbsp Olive Oil
In food processor, process cottage cheese, bake mix, and eggs until smooth.
Brush nonstick pan with olive oil and heat to medium heat. Drop by tablespoonfuls onto pan. Cook until just possible to flip over. Then lower heat to medium- low and cook until done.
Yields 12 mini pancakes.
