No Bake Sugar Cookies

1/2 cup melted coconut
oil*
1/2 cup creamy peanut
butter
1/2 cup coconut sugar (or
Stevia, to taste)
1/4 cup cocoa powder
1/4 cup unsweetened
vanilla Almond Milk
Pinch sea salt
1 tsp pure vanilla extract
3 cups instant oats
Add melted coconut oil and peanut butter and stir until well combined.
Add in the coconut sugar, cocoa powder, almond milk, sea salt, vanilla, and oats and stir until combined.
Drop the dough by spoonfuls onto a parchment lined baking sheet.
Set in refrigerator and let set then serve. Store leftovers in airtight container and keep in refrigerator.
*A mashed banana can be used in place of coconut oil. The cookies may turn out a bit drier but still good. *
